A 1978 graduate of the Culinary Institute of America, Bourdain worked as a professional chef in New York City for nearly twenty years, eventually being named Executive Chef of Brasserie Les Halles in 1998. Though best known for hosting the Emmy-winning television program No Reservations, Bourdain first shot to prominence after his book Kitchen Confidential reached the New York Times Best Seller list in 2000. Bourdain would follow Kitchen Confidential with A Cook's Tour (2001), an account of his travels to many different parts of the world, including Cambodia, Russia and Morocco. A Cook's Tour, which was simultaneously filmed as a television program, first showed the type of passionate and honest commentary on international cuisine that Bourdain would become best known for. Bourdain has written ten books in total (including three fiction books), most recently 2010s Medium Raw which was also a New York Times Best Seller. Kitchen Confidential is an autobiographical account of chef Anthony Bourdain's entry into the professional culinary world of the 1980s and 90s and his experiences within it. The book is organized into six sections, each representing part of a multi-course meal Appetizer, First Course, Second Course, Third Course, Dessert, and Coffee and a Cigarette. BOOK EXCERPT FROM THE ANTHONY BOURDAIN QUICKLET KITCHEN CONFIDENTIAL Motivated by his embarrassing experience at Marios kitchen, Bourdain decided to apply to the Culinary Institute of America in Hyde Park, New York. Quick to mention how it was not nearly as selective as the school is today, Bourdain was easily and quickly able to gain entry due to a connection who had donated money to the school. Though his restaurant experience was limited compared to a seasoned chef, it gave him an advantage over his classmates, most of whom were younger than he was. Bourdain was able to pass through most of his classes with relative ease, which made him arrogant and cocky. However, because of the humiliation that he suffered at the hands of the chefs at Marios, he also had a more grounded perspective than before. This is best exemplified by his encounter with Chef Bernard, a terrorizing French chef who ran the Escoffier Room, a famed restaurant on the grounds of the CIA. It was considered a rite of passage for every chef that attended the CIA to receive a furious, profanity-laced scolding from Chef Bernard during the course of taking his class. When Bourdain was scolded by Chef Bernard, however, he looked in [Tonys] eyes and saw, perhaps, that Tyrone and the Mario crew had done his work for him. Not since the Bible have I seen such a faithful, beautiful rendering of one man's struggle to find peace in having been born into this meaningless hell we call life. Between Daniel Stern and nothing, I will take Daniel Stern.
Mr. Stern's indispensible summary of Bourdain's work refuses the temptation to condescend to the Quicklet reader, and instead provides a down to earth recap of Bourdain's autobiography, a must-read (or must-Quicklet!) for anyone wanting to understand current food culture in America. Highly recommended.
I've read dozens of abridgments of Anthony Bourdain's Kitchen Confidential and Daniel Stern's rendition outshines them all. If you pick one book to not read, don't read Kitchen Confidential. And then DO read this life-changing Quicklet. I did and now I no longer hear that screaming in my head.
Initially, I intended to wait for the movie but the reviews drew me in and I haven't looked back. Dare I say that Daniel Stern is the next great writer of his generation? While his story started slowly, I was quickly entranced by the rhythm of his prose as it flowed from chapter to chapter, his hair dancing in the wind, his muscular arms shiny with sweat. My longing fulfilled at last. Yes, Daniel, yes! You are our Hemmingway.
This brilliant masterpiece of summary is perhaps the greatest work of its kind in the history of literature/literature-ish writing. Without a doubt, I am a better, smarter, stronger man for having read this. I'm taller, more handsome, and better at the guitar. I can dunk now. I cannot recommend Daniel Stern's masterwork any more intensely than I am. If you have the choice between reading this book and BREATHING AIR... take the book. Life without the Quicklet on Kitchen Confidential is a life not worth living.
I read five or more Quicklets a week, in search of the best and most delectable, the most interesting and important. In Mr. Stern's opus on Kitchen Confidential, I have found it. Mr. Stern's refined prose and impeccable syntax craft an argument for transubstantiation. The advertised genre is "Quicklet, as "shiny glass" might have advertised a diamond. I drank in this oeuvre with all of my senses, with pleasure and indulgence, contemplating Nirvana, as one might enjoy a sunset, a massage, or a fine bottle of Bordeaux. Like Creed's My Own Prison or Stephenie Meyer's Twilight, Mr. Stern's debut could literally change the world. For some, the perfect Quicklet can be exactly analogous to towering sets and a thundering orchestra, to the kind of stagecraft that can lead to tears and applause.
For such people, Mr. Stern's Kitchen Confidential exists.
